Vegetable Cookies - Indulgence meets Healthy

Cookies are all about indulgence. If you don’t feel that you are indulging yourself in something close to perfection why waste the calories – life is just way to short. A friend of mine and I were going to stop for coffee while we were off on a road trip. She said “Make sure we stop at Starbucks because there goodies are not all that good.” I chuckled and asked for more of an explanation. She said, “Panera has fresh delicious treats and they are hard to pass up but the dried out goodies at Starbucks are easy to walk by, it will save me some calories.”

Do you ever think about that? I sure do. I will take a bite of something and then make a determination. I use to be the person who said, “Don’t waste food.” However now my theory is don’t eat something that does not blow my socks off.

I know I have talked about the gourmet flourless cookie (Bizzy Lizzy Bakery) but the variations keep running in my head. I was driving the other day and came up with what I will refer to as my vegetable version. I figured out I can make these wonderful morsels with Pumpkin, Zucchini, Yellow Squash, Carrots, Sweet Potatoes and I believe Beets (color may throw this one out). Vegetables and cookies that fit the level of indulgence I require allowing myself to eat them. Wow – it may be heaven on earth.
